Meaty Monday Pantries

Pantries

"A familiar pantry is like being surrounded by friends who won't let you down, within instant reach."  Alice Waters "My Pantry"

No matter your diet, or your families' diet, a pantry saves you time, effort and keeps the hassles of deciding what's for dinner down.  Eating meals that do not include processed food will help you feel better, perhaps even stronger and healthier.

There are multiple resources and ways to do this.  Some of my friends are using services that provide all of the food, the recipes and menus.  I find this idea limiting. I eat ketovore.  I don't have to limit my food or my calories.  My choices are not stringent nor difficult for me.  I eat meat, usually beef, chicken, or bacon, eggs, cheese,  yogurt or sour cream on occasion.  I add onions, guacamole, avocado, tomatoes, peppers and spices.  A salad is my choice at work since I refuse to ingest wheat of any type since it makes me ill.

My favorite cookbook is  "Saving Dinner the Low Carb Way" by Leanne Ely.  She also has a Saving Dinner for vegetarians, for paleo, for budget cooking, for holiday cooking and for the basics of cooking.  As far as I am concerned you cannot go wrong with her books.  They include menus, grocery lists and a plan for meals that aren't included so that you aren't wondering what the heck to do for breakfast and dinner.

I have many books on pantries. The Allergy-Free Pantry: Make Your Own Staples, Snacks, and More Without Wheat, Gluten, Dairy, Eggs, Soy or Nuts,  and Mrs. Wheelbarrow's Practical Pantry: Recipes and Techniques for Year-Round Preservingare two more of my top pantry books, I have over a dozen pantry books on my Kindle  and most of them are duplicated in my library.

Quick Tuna Salad, low carb, keto, probably not paleo

2 cans of tuna, quality counts but boy, it is a pain to find it.  I had a neighbor who paid for pet sitting in home caught/canned tuna.  Didn't last long enough.

A heaping tablespoon of mayo.  Squirt of mustard, half of an onion chopped up fine,  two teaspoons of dill pickle relish (you can substitute sweet pickle relish if that is your preference), if you like celery and egg add it in proportions to your liking.  I add a squirt of lemon juice, a half lemon squeezed in was perfect when I lived in lemon country.  Stir thoroughly, eat on Parmesan crisps if eating keto, or without any crackers as a salad.  Just yum.  you could stuff into a fresh garden tomato or serve on a bed of lettuce if you like.

Keep in mind I am a home cook.  I have the nutrition class required for my RN degree.  Everything else I know about nutrition is self taught.  You may not agree with my views. So be it.
