Mexicali Shrimp

Ingredients: Red pepper, orange pepper, yellow pepper, green pepper  Use in proportions you enjoy

Onion

Red pepper flakes to taste

Garlic powder 1-2 tsp

Chile powder, I use 1 tsp each ancho chile powder and chile powder

Cumin, 1-2 tsp

Shrimp, frozen are fine, get the medium ones

Saute the peppers and onions in butter or your preferred oil (NO VEGETABLE OIL!).  Add a pinch of red pepper flakes, keeps this from tasting too sweet.  When the veggies are almost cooked, pull to sides of pan and put shrimp in center, saute until cooked through.  Stir the veggies into the shrimp.  Add a half cup of your favorite picante sauce, salsa or pico de gallo.  

Paleo and low carb option  Serve over cauliflour rice and a big side salad.

Also good with chicken.  I haven't tried it with scallops but I think this would be out of this world good.

I use the peppers and onions sauteed in butter for the base for a lot of recipes, you just change the spices and sauces to enhance the dish you are making.  I grew up on meat with salt only, and still don't use a lot of seasonings on beef unless it's for tacos or other Mexican food.

Pantry principles

I keep peppers on hand in season, my sweetheart grows peppers, so we have fresh peppers most of summer and deep into fall/winter.  Garden zone 8.

I always have the spices listed on hand.  I keep cumin seeds, and roast prior to grinding for the best flavor.

Onions are also standard on my grocery list and in my fridge.

Frozen shrimp are easy to keep on hand.
