Stir fry options

Start with your choice of meat, today this is chicken, cut up one boneless skinless chicken breast (for ease of cooking, you could cut up one breast into strips) per person.  Use any bones and skin for broth

Choose up to 2 cups of low carb veggies per serving, in proportions you prefer:

Green onions, broccoli, cauliflower, bean sprouts, bok choy, snow peas, green beans, mushrooms, onions, cabbage, zuchini or yellow squash.  I like using fresh from the garden produce when available.

Put the cut up chicken breast in a ziplock baggie with a tablespoon of coconut aminos per breast and squish it all together, coating it completely.  Put this in fridge to marinade.

Chop your veggies as needed.  If you are using frozen veggies, I like to allow to thaw slightly or steam very lightly prior to stir frying.  Press one clove of garlic per chicken breast and grate a tablespoon of gingerroot per breast.

In my largest skillet, I heat my coconut oil mix, one part coconut oil, one part olive oil and one part sesame oil, a few tablespoons, on medium heat stir in the garlic and gingerroot,  this takes barely a minute, then put in chicken cooking thoroughly, in batches if needed.  Pull out and keep warm.

Stir fry the veggies in the same pan, add more oil if needed, stirring until cooked and tender.  I prefer slightly crunchy, but this is your food, cook it to your preference.  Once the veggies are done, add the chicken, and any broth in the container back into the pan, stir completely, add more coconut aminos to taste and enjoy.

Low carb, serve with riced cauliflower, or without any additions but a nice side salad.  You could also add slivered almonds or other nuts, be AWARE of the carb counts of the nuts.

If you are serving others you could serve on a bed of cooked brown rice.  I have a rice mixture I get from Azure Standard that is yummy.  It's brown rice, white rice and wild rice.  It doesn't make my stomach hurt like many rices do.
