Meaty Monday
I am going to use this photo as a jumping off point for a meal this week. I will cook cod in a garlicky butter sauce with some pepper flakes, just a sprinkling, I don't like things to hot. I will add sprinklings of smokes paprika, a light sprinkle of onion flakes, and some dried basil and oregano, curry powder, and salt to taste. Once it's done, I am going to add a quarter to half a cup of coconut milk, cooked until the coconut milk is heated through.
This could easily be served on a bed of spinach, it would slightly cook the spinach. If you are not on any special diet, rice as a side dish with a veggie or a salad would complete the meal.

Monday-burger, also an omelet early in day with guacamole I need to finish up
Tuesday-light meal, eating at Indian restaurant Tuesday evening
Wednesday- Mexicali chicken
Thursday-spaghetti, with multiple servings frozen for later. I will bake the spaghetti squash and freeze to serve together.
Friday-Frittata and spaghetti for work meals
Saturday Frittata and chicken/taco salad
