Snacks, meals, quick eats.  I don't eat snacks, but my meals are often a "snack" due to having very little time to eat when I am at the job.  Yes, a real job, don't ask me what I think of that, it's a necessity I look forward to eliminating eventually.

I have a few minutes here or there I can steal away to get some food.  Therefore, I am still following my eating plan, but I need quick.  I carry nuts, cheese sticks and pepperoni.  I also have at least a couple of hard boiled eggs for when I have a little more time.

My meals are generally recipes from a book called Saving Dinner.  I use the low carb book from this series.  I love her recipes and have used several of them as jumping off points.  I take the recipe, change the protein from pork to chicken, or shrimp or even beef and then tweak the seasonings.  The recipes are for four servings, so I can have a meal and leftovers for work, or multiple work meals.  It's always a win, as the recipes are very tasty.  

I also have some home canned variety.  Right now it's beef.  I also like home canned chicken.  It tastes yummy, makes a base for soups or casseroles when I don't want to eat it as is, and costs less than the equivalent canned food from the grocery store.  

What do you do for lunches?  If you are on the road, what kind of food makes good road food?  If you were like me and don't or can't eat sandwiches, what do you substitute?
